Fillet
Hand Cut
Filets are hand picked to fit the specific needs of each individual costumer. They are then hand cut to within 1 oz the required weight, silk and belly fat removed with the chain (rope) on or off as desired. from us.
New York Strip Steak
Hand Cut
Each New York Strip is hand cut to within ½ oz of requested weight, pinned, belly fat removed, and outside fat trimmed to within 1/8 inch. At this point the strap has been removed and the steak has 1 inch or less of tail remaining
